The Baltic Triangle has a new café in town.

Chapters of Us is a new trendy eatery, tucked away on Simpson Street, and could be set to become another jewel in the crown for the Baltic Triangle as it blossoms into a thriving creative scene.

This quaint little coffee shop fits right into the creative ethos of its surroundings. Sleek design and covered in greenery, it’s the perfect spot for a morning coffee. The Chapters of Us branding was thought up by Black & Ginger, a fellow Baltic creative business, that wanted to keep the community feel at the very forefront of their customer’s minds. 

What sets Chapters of Us apart from the rest, though, is their unique approach to minimising waste. 

From food, drink, and everything in between, they want to squeeze every last inch of goodness from everything they use. Wasting good food is absolutely unforgivable in their eyes, but when it comes to foodservice, waste is inevitable, right? WRONG. They’ve constructed a solution. 

Whether its repurposing left-over milk from their coffees into ricotta, turning fruit into dehydrated garnishes for your cocktails or even utilising the dreaded ‘end of the loaf’ for sourdough crackers, they’re fighting against waste wherever they can.

Their best idea, though, comes after dark. From 5 o’clock onwards, they serve up all their leftover food in the form of a buffet that they call their ‘aperitivo’. This is an Italian tradition that involves cocktails and a platter of picky bits. Count me in. The best thing about this is that once you’ve paid for your drink, it’s all yours to graze as much as you please!

At first, you half think in the back of your mind that is the food going to suffer considering it’s just a load of “whatever people didn’t want” thrown onto a buffet and served cold? Thankfully, it’s anything but that. All the food I got to sample was delicious – their tzatziki was next level – and the whole concept is a novel idea in itself. There’s a real sense of community fostered by serving food like this, and I’m all for it.

Chapters of Us is another welcome addition to the Baltic Triangle, an area that was always described as a hotspot now doesn’t seem to be slowing down in terms of development, and I hope to see it thrive. 

Opening a business is difficult, to say the least, but a business with a social purpose that wants to make a change is another challenge altogether. The project is admirable, and I wish Chapters of Us all the best carving out their own space in the Baltic for years to come.
